XOL is pure ceremonial-grade cacao crafted in small batches with a focus on freshness, care, and integrity. Our cacao is minimally processed, never exceeding 118°F, and formed into drinkable coins to preserve its natural character and consistency from cup to cup. To maintain quality at every stage, we control as much of the process as possible — sourcing the highest-quality cacao beans we can find and handling the roasting, winnowing, nib processing, and preparation ourselves.

Early on, as regular users of cacao ourselves, we noticed a disconnect between what ceremonial cacao was meant to be and what was often being sold. Much of what we encountered was commodity cacao repackaged and marketed as ceremonial — long past its prime, heavily processed, and lacking the vibrancy cacao is known for. From the beginning, our goal was to work as close to the source as possible, focus on real quality, and create a cacao that delivers what it’s supposed to — without unnecessary markups or inflated pricing.

How It's made

Each batch of XOL begins with carefully selected cacao beans chosen for quality, character, and balance. We lightly roast the beans to develop flavor while preserving their natural integrity, then crack and winnow them to remove the shells. The nibs are stone-ground slowly into a smooth cacao paste and formed into drinkable coins at low temperatures to maintain freshness, texture, and consistency.

We commit to keeping XOL fresh, intentional, and true to the ingredient. Our cacao is made in small, frequent batches so it never sits or loses its character over time. We roast only as much as needed to winnow and work with the beans, keeping temperatures low throughout the process to preserve the natural compounds that make cacao supportive and vibrant. Every step is guided by restraint — protecting what’s beneficial and leaving nothing unnecessary behind.

Cacao has been valued for centuries as a nourishing, functional drink — not because it overstimulates, but because it works gently with the body. Naturally containing theobromine and a range of beneficial compounds, cacao supports steady energy, mental clarity, and balanced mood without the sharp spikes associated with caffeine. When handled with care and minimal processing, cacao becomes something that can be enjoyed daily as a grounding, supportive ritual.

XOL is a small, family-run team working closely with cacao every day. We intentionally keep things small and hands-on, because care doesn’t scale. We love what we do, we love cacao, and we take pride in making it with the attention it deserves.
